Kentucky Straight Bourbon Whiskey

Most Kentucky bourbon is built on one mashbill, settled early and defended for a generation. Ascension is built on two. One runs high corn for sweetness and body, the other carries more rye for spice and structure, and blended in batches of no more than ten barrels they do what neither does alone: the corn gives the weight, the rye keeps it from going soft. It is never chill filtered, so nothing is trimmed off the result.

Nose: Baked bread, buttered popcorn, dried fruit
Palate: Caramel and vanilla with cinnamon, nutmeg and black pepper
Finish: Smooth mouthfeel, long and warm
