Heaven’s Door Refuge Straight Rye Whiskey, Finished in Sherry Casks

Refuge is a 100% rye whiskey aged six to eight years in oak, finished up to six months in sherry casks and bottled at 92 proof. A rye only has to be 51% rye, and most are, with corn making up the rest and quietly sweetening the spice away. Refuge has no corn in it to round anything off. It is blended only once every barrel has reached the maturity we want, and the sherry settles dried fruit and honey around the pepper without covering it, so the spice still leads, which is what a rye is for.
