Heaven’s Door Decade Series II: Straight Rye Whiskey, Aged 10 Years

Decade Series II is a straight rye aged ten years in new American oak and bottled at 100 proof, an age almost no rye ever reaches. The grain pulls tannin and char out of the barrel faster than bourbon does, which turns most ryes woody and bitter well before their tenth year and is why the category mostly stops around six. Decade II went the distance on barrels that were still getting better, and the time wore the pepper smooth without taking it out, leaving dry oak and baking spice behind it. This is what a ten-year rye tastes like when the wood cooperates.
